Style:
The Grampians is where Shiraz first spoke to me in Victoria. In cool years like 2022 The Grampians is extremely marginal and struggles to ripen Shiraz fully, producing a lighter style that is extraordinarily savoury. Notes of black olive brine, white pepper, wet alpine herbs, raspberries, plum skin and cherries make this wine sing when paired with many summer and Asian foods. I personally love this wine with a huge bowl of ramen.
Winemaking:
The fruit for this wine is sourced from the most northerly section of Garry Rice's vineyard in Concongella. We complete as many as five picks of Shiraz from this one vineyard to really break down the different components for our Shiraz wines. The most northerly section is the most spice driven portion of the vineyard.
15% whole bunch, fermented in open tanks at low temperature for three weeks to allow a slow, low, gentle ferment.
