What's in the glass: This estate-grown Chablis is produced with full organic practices from 40-year-old vines, predominantly from the Lieu-dit of Maligny in the North, close to the winery and their beautiful holdings in the 1er Cru of Fourchaume along with a parcel from Flyes and from Chablis. Average age of 40 years old.
The grapes are hand-harvested, and the fermentation takes place with indigenous yeast in stainless steel tanks, followed by 100% malolactic fermentation. The wine is then aged in a combination of 65% stainless steel tanks, 15% amphora, and 20% in 228L and 600L oak barrels, with 4, 5, and 8 uses. It is aged on fine lees for 14 to 17 months before bottling.
