What's in the glass: Timotheus is an intriguing blend of Grüner Veltliner and Weissburgunder from 40-year-old organic vines, crafted with artistry by Gut Oggau. This textural gem dances between amber and white, delivering a sensory experience like no other. One-third of the grapes ferment on the skins for three weeks, while the rest are directly pressed, and later re-blended. Fermentation unfolds in seasoned 500-litre barrels, followed by 12 months of elevage, all without batonnage, fining, filtering, or added sulphur.
The result is a wine of remarkable depth and freshness, offering layers of spice, orange citrus, green apple, and melon. Its chewy texture is complemented by a lively vibrancy, making each sip deeply compelling.
