Region: Chablis
Variety: Chardonnay
What's in the glass: “From two small plots totalling 0.81 hectares, planted in 1971 and 1991, this 1er Cru lies on the higher, steeper, rockier slopes of Vaillons, facing southeast. With vines averaging 40 years of age, this site produces wines that Edouard Vocoret describes as “riper, warmer and spicy,” showcasing the signature of the Vaillons hill.
Fermented naturally in steel and aged for 12 months in older barriques, the Châtains combines finesse with precision. Expect lifted floral and citrus notes alongside Chablis typicity – iodine, minerality, and a subtle saline edge – carried by a long, finely structured finish.
“…airy nose with notes of mineral reduction, acacia and plenty of Chablis typicity… delineated and utterly delicious middle weight flavors… excellent depth and persistence on the markedly dry but not especially austere finale… a Châtains of finesse.” – OUTSTANDING, 90–93 points, Burghound
