What's in the glass: Charles Dufour is representing a new generation of small vignerons in the Cote des Bars. He started producing Champagne for his family's business in 2006 and fully converted to organic agriculture in 2010. 'Bistrotage' is 100% Pinot Noir harvested from the vineyards of Charles' mother (Francoise) located in Vallee de l'Arce. Combination of stainless and barrel fermentation, with no dosage and no added sulfur. This is a rich Blanc de Noirs with a complex nose that is clean with a touch of spice.
