The 2021 season was another cool one, and so yields were only slightly above the miniscule 2020 vintage. However the ripening period was cool but dry, resulting in a wine with considerably more density and concentration than last years offering.
We've got 7 different clones of Pinot Noir across our vineyard and we try (if volume allows) to ferment them separately with a range of treatments as we experiment to see what works with our fruit and site. So there's a bit of hand destemming, some 14 day carbonic treatment, some whole bunch and a combination of these, as we try to build as much layering and complexity as possible.
All our reds go through our little manual basket press. Elevage is completed in 50% old oak, 50% stainless, gathering a little warmth and oxygen from the barrel component and freshness and energy from the tank component.
Everything is very low tech and we aim to move the wine as little as possible throughout the whole process.
