Region: Burgundy
Variety: Pinot Noir
What's in the glass: "Pinot Noir from 90 year old vines in Échevronne, grown on clay and hard limestone. 100% whole bunch. Three day cold soak, followed by semi-carbonic maceration, with a little punching down afterwards for extraction. Aged in 228L seasoned barrels for 12 months. Settled in tank for a further 3 months. Not fined or filtered. Red roses and black tea - more floral than fruity. Linear, yet chewy profile with dark cherries and blackberries. Sticky fine tannins and chalky finish. Light, charming and sensible." - Importer Notes
