What's in the glass: A refined sparkling wine from Tasmania’s Tamar Valley, crafted from a single block of hand-harvested Pinot Noir. Gently whole bunch-pressed and fermented in stainless steel, it underwent full malolactic fermentation before spending 24 months on lees, with tirage in late 2021. This elegant release offers aromas of bright berry, white florals, and citrus, leading to a palate of crisp pear, shortbread, and vibrant acidity. Soft yet structured, it is a poised, champagne-esque wine. Perfect with Foie Gras Parfait, turkey and cheese.
