Joseph, who has since moved into purpose built new premises just above the village of St-Aubin, started picking his 2021 vintage on 19th September through to 1st October. Yields were 30-35 hl/ha in the plain, 20 hl/ha elsewhere or worse, and some 1ers cru had to be blended together. The overall average was 28 hl/ha, the worst was Murgers des Dents de Chien at 6 hl/ha. Minor chaptalisation was used where necessary, mostly to bring anything under 12.5% up to that level. Joseph purchased no new wood for either colour, relying on the existing mix of 600, 500 and 228 litre barrels. Nothing had been bottled, though planned to happen by the end of the year, which would mean a little shorter elevage than usual.
