The fruit is sourced from the steep, north-facing slopes of the Butcher’s Hill vineyard in Richmond, which was established by the Pooley family in 2003. This unique positioning ensures the vines receive maximum sunlight hours while remaining protected from the cold southern winds typical of southern Tasmania. Such a microclimate allows for a long, even ripening period that yields fruit with remarkable aromatic intensity and purity.
