What's in the glass: They wanted to create a wine unhindered by DOC regulation and its requirements so they took garganega grapes, wild fermented them in stainless steel, pressed them into large-format concrete for eighteen months and bottled it with only 20ppm sulphur. The result is a ‘Soave’ unlike any you have had before.
