What's in the glass: 'Distinct brine and Manzanilla-like character, ripe lemon and green apple, yeast and flowers. It’s dry and saline, the texture is firm and chalky, there’s a thirst-slaking bite of acidity, a lovely tickle of delicate bubbles, and a steely dry finish of excellent length.
