What's in the glass: Savagnin is a distant cousin of Gewurtztraminer, with thick skins and a late ripening cycle, thus there is no shortage of extractable matter. The wine was fermented in concrete and aged for 7 years (oulilé - topped up) in very old large format oak (foudre and some demi-mouids). This long ageing has tamed the wine's exuberance. Winter and autumn forest flavours abound. This wine delights with dried and confit fruit aromas and flavours, carried by the classic long Jura acidic finish. The is exceptional, slow evolving white wine, and is a rarity in the current age of immediate fulfilment.
