What's in the glass: This is the Bornard Trousseau made for joyful not-too-serious drinking, as opposed to the more thoughtful Garde-Corps. The name is derived from "guiguer”, which means to jump. From red marl vineyards in Pupillin it was harvested on 19 September and 100% de-stemmed. It spent 3 weeks being macerated with pumping over once a day and a light punching down.
Aged predominantly in tank (90%) unusually a small proportion was also aged in old barrels. It was bottled without filtration after 9 months. The ABV is quite high (14.1%) but there is still noticeable acidity. It has no additions and, despite being the glou glou Trousseau, this vintage particularly, has potential to age. Certified organic.
