What's in the glass: Early handpicked Vermentino (66%) for broad savoury characters and Fallanghina (34%) for driving acid and freshness were lightly pressed together for a co-ferment in neutral French oak. The complete malolactic fermentation smoothed out the tart malic acid, and the wine was bottled unfiltered and unfined with a lick of residual sugar for some natural bubbles.
