What's in the glass: Shiraz and a little malbec from Glenhope in the north of the Macedon region. These are great and mature vines, and this is a well-favoured vineyard in the eyes of Matt Harrop, Michael Dhillon and other savvy vignerons. Matt says it's no secret that I love Birk's Wendouree Cab/Malbec, so I thought I'd do a blend. "I fermented it simply and without any tricks, then aged it without any new oak and put in the bottle with less than a year in barrel. I wanted to preserve all the fruit and natural character and purity." This is not a light confectionary-flavoured wine, but it's rather more serious with lovely aromas, complex nuances, deep, honest flavours with balanced silky tannins and a superb juicy finish.
