This Sauvignon Blanc was picked from the Bordeaux clone F14V9.
Once harvested, it is given 12 hours skin contact with stalks before being pressed straight to 100% oak with 30% new French oak.
It is fermented with partial full solids occurs and then aged for three months before blending and bottling. This expression of Sauvignon shows aromas of citrus
and oyster shell. The palate is complex and sumptuous, with notes of citrus and pear, as well as a chalky textural undertone.
